Mackerel Burgers

Ingredients
- 2 cans John West Easy Peel Mackerel In Olive Oil, drained
- 200g fresh spinach
- 4 spring onions, finely chopped
- 1 onion, finely chopped
- 1 tsp olive oil
- Zest of 1 lemon
- 1 large egg
- 150g bread crumbs
- Flour for dusting
Mackerel Fillets In Olive Oil
Classic mackerel fillets in olive oil. Not-so-classic easy-peel lid. Pair with a salad for a perfect mid-week work lunch. No mess, no fuss.
Step 1
To prepare our Mackerel Burgers Recipe gently fry the onion and spring onion in the olive oil for 2 to 3 minutes until soft but not browned. Leave to cool.
Step 2
Meanwhile, in a bowl, add the chopped spinach and lemon zest and flake in the mackerel.
Once the onions are cool add these to the bowl and mix in the egg and the breadcrumbs.
Lightly flour your work surface and divide the mixture into four balls, forming them into burger patties.
Place in a frying pan with some olive oil and cook for 6 to 7 minutes, turning every so often until golden brown.
Step 3
Serve in a soft floury bun with crisp lettuce and sliced tomato.
Tip: Why not make a simple and tasty sauce for your burger? Just mix the mayonnaise with the chopped capers, gherkins, parsley and lemon juice. Delicious!

- 2 tbs mayonnaise
- 2 tsp chopped capers
- 4 gherkins, chopped
- 1 tsp chopped parsley
- Squeeze of lemon juice
