Thai-Style Sardine And Tomato Soup

Tomato soup is a traditional favourite, but transform it into a Thai fish soup and it tastes like nothing you’ve ever tasted before. In a good way, of course! By combining oriental style ingredients and a dash of Eastern culinary know-how with our great little flavour-packed sardines, you get a simply sensational soup. And despite being such an exotic and fragrant mix, it only takes 10 minutes to prepare and 10 minutes to cook, so you can create something deliciously different without a great deal of fuss.
Ingredients
- ½l chicken stock
- 3 large shallots, minced
- 3 kaffir lime leaves
- ½tsp chilli flakes
- 2 stalks of lemongrass, crushed
- 2 limes, juice only
- 1tbsp fish sauce
- 1 400g tin chopped tomatoes
- 2 cans John West Sardines In Spicy Tomato Sauce
- Handful of mint leaves, shredded
Sardines In Tomato Sauce
Tasty, protein-rich sardines in a classic tomato sauce. Have them straight out of the tin as a cold treat on salad, or heat them in a saucepan and serve them over pasta or rice.
Step 1
To prepare our Thai fish soup recipe, begin by putting the stock, shallots, lime leaves, chilli flakes and lemongrass into a pan. Bring just to a boil, then turn off the heat and cool for 15 – 20 minutes to allow the flavours to mingle and blend.
Step 2
Stir in the lime juice, fish sauce and tomatoes and bring back to the boil. Turn down to a simmer and add the John West Sardines cut into bite size pieces, along with their sauce. Add the mint, remove the kaffir leaves and lemongrass and warm through before serving.
