Tuna Pesto Rice

Ingredients
- 110g brown basmati rice
- 140g frozen peas
- 150g cherry tomatoes, halved
- 2 tbsp pesto
- 1 John West Infusions Tuna Basil
- pinch salt and pepper

Classic tuna with basil-infused extra virgin olive oil in a resealable, no-drain pot. Perfect for topping a salad when you want a light lunch that doesn't require much preparation time.
Step 1
Cook the brown basmati rice in plenty of salted water according to packet instructions, until tender.
Step 2
Then, just before it’s done, add the frozen peas and bring back to the boil, then drain and cool.
Step 3
Stir in the cherry tomatoes, pesto and the John West Infusions Tuna Basil. Season to taste and serve.
